Chocolate Avocado Mousse

Ingredients - Makes 4 portions

- 3/4 Tin of coconut milk

- 1 Orange or Handful of fresh mint (if flavouring)

- 1 Overripe avocado

- Handful walnuts/cashews

- 2-4 Tablespoons cocoa (to taste)

- 1-2 Tablespoons of honey/maple syrup/agave (to taste)

Recipe - NEED a blender (I use my nutribullet)

Place all ingredients in the blender - if flavouring orange I grate the whole orange and squeeze all of its juice and use 1/2 tin of coconut milk instead of 3/4. Turn on the blender, leave for a good few minutes and intensify with cocoa as desired - scoop in to pots and fridge for minimum 1 hour before serving - overnight is best if you can.
