Scrambled Tofu


- 1 pack tofu

- 1 Onion

- 8 - 10 tomatoes

- Large handful of spinach

- 2 Tbsp of dark soy sauce

- 1 Large tbsp of peanut butter

- Salt & Pepper to taste


Finally dice the onion and pan fry on a low heat with a little oil. Once it starts to turn colour add the block of tofu crumbling it apart with your hands. Add soy sauce - should be enough to turn the colour of the tofu but no more. Add in finely chopped tomatoes and spinach and stir. Add in peanut butter and move around on a low heat until melted and mixed throughout.


Serve on toast of your choosing or on a jacket potato with salad! I added feta to mine too.
